Quinoa salad


Maybe you remember me writing about Attila Hildmann's cookbook: "Vegan for fit". I tried the first recipe; it's adapted, but I used different vegetables and spices. His one is called: "Quinoa Salat to go". So here's my version of it:



Quinoa Salad:

Time: 20 min
Servings: 1-2
Ingredients:
- 100g Quinoa
- 1/2 tsp sea salt
- 250ml water
-> cook for about 15 minutes

- 50-100g tofu
- 2 Tbsp soya sauce
- 2 Tbsp olive oil
- pepper
-> roast for about 5 minutes

- 1 carrot
- 1 tomato
- 5-8 cooked brussels sprouts
- juice of 1/2 lemon
- pepper
- 1 Tbsp olive oil
-> chop into small pieces and mix all ingredients together

    1. Quinoa ist aber etwas anderes: auch Inkareis, Perureis oder Inkakorn genannt :)
