Scrambled Tofu - "Rührtofu"
This (really) looks like scrambled egg. But it's vegan and made with tofu!
Hmmm. I ate it for about 3 to 4 times during the last weeks.
- 200g tofu, mash it with a fork
- 1 onion, chopped
- olive oil, pepper, salt
- curry, paprika
- parsley, rosemary, etc. (any herbs you like)
(- soy creamer)
Put the mashed tofu and the chopped onion in a pan with some olive oil. Roast for about 5 minutes and then add spices and herbs. You can add some Tablespoons (soy) creamer to make it a little bit creamier (If you add some chopped vegetables or fruit it's like (bought) egg salad).
A friend showed me this blog and this recipe. And I tried and loved it immediately. It's great to eat it on a toast or just straight out of a bowl. Hmmm. Now I one a serving, even if I'm not hungry!
